Experiment with vegetable noodles.

Veggie noodles are a quick and easy way to increase your vegetable intake. They're also an excellent low-carb replacement for high-carb foods like pasta.

They're made by spiralizing vegetables, which turns them into noodle-like shapes. You could also try the following:

Shred or slice them with a mandolin.

Simply cut them up as desired.

A spiralizer can spiralize almost any vegetable. They're commonly used for nutrient-dense vegetables like zucchini, carrots, spaghetti squash, and sweet potatoes.

When the "noodles" are done, they can be served with sauces, other vegetables, or meat, just like pasta.

Incorporate vegetables into sauces

Blend into smoothies..

Smoothies are a light and refreshing breakfast or snack. Green smoothies in particular are popular for hiding a lot of leafy greens in fruity packages.

They're typically made in a blender by blending fruit with ice, milk, or water. Vegetables, on the other hand, can be added to smoothies without sacrificing flavour.

Popular smoothie ingredients include fresh, leafy greens like kale, blueberries, bananas, and cucumber in this recipe.

One cup of spinach (25 g) contains more than a full day's worth of vitamin K and half of the daily value of vitamin A.

Kale also contains significant amounts of vitamins A, C, and K in the same serving.
